Basil Mahi Mahi with Asparagus

Ingredients

  • juice of 1 lemon

  • salt and pepper, to taste

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1/2 tsp cumin

  • 5 cloves garlic, minced

  • 15 basil leaves, chiffonaded

  • 1/4 cup extra virgin olive oil

  • 1 1/2 lbs mahi mahi (or other white fish like halibut or cod)

  • 1/2 red onion, thinly sliced

  • 1 bunch asparagus, trimmed

 

Instructions

  1. Pat fish dry and season with salt and pepper on both sides.

  2. Whisk together the lemon juice, olive oil, oregano, paprika, cumin, minced garlic, and basil leaves. Place the fish in a shallow baking dish and cover with the marinade. Marinate in the fridge for at least 30 minutes and up to 6 hours.

  3. Preheat oven to 425º.

  4. Arrange asparagus and onions in the bottom of a 9x13" baking dish. Place the fish on top and pour the marinade over everything.

  5. Bake in the oven for 15 minutes or until the fish is done and flakes easily.
