Country Breakfast Bowls
Ingredients
Sweet Potatoes
2 large sweet potatoes, large diced (~4 cups diced before baking)
2 tsp avocado oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp chili powder
salt and pepper, to taste
Bowls
12 oz chicken sausage, sliced
6 eggs
1 16oz carton egg whites
4 cups spinach, rough chopped
3 oz cheddar cheese, shredded
3/4 cup salsa verde
Instructions
Preheat oven to 375º.
Toss diced sweet potatoes with avocado oil, garlic powder, paprika, chili powder, salt, and pepper. Spread on a baking sheet and bake for 40 minutes, tossing halfway. In a skillet over medium heat, brown sausage slices for about 2 minutes per side, then remove.
Whisk eggs and egg whites, pour into the skillet, and stir in spinach until wilted.
Divide sweet potatoes, sausage, eggs, shredded cheddar, and salsa verde among six containers.
To reheat, microwave for 2-3 minutes or bake at 350º for 20 minutes.
