Chicken Fajitas
Ingredients
Chicken Fajitas
1 1/2 lb chicken breast
1 onion, thinly sliced
3 bell peppers, thinly sliced
1 tbsp avocado oil
1/2 lime, juiced
4 gluten free tortillas
Fajita Seasoning
1/2 tbsp chili powder
1/2 tbsp cumin
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
Combine the fajita seasoning ingredients in a small mixing bowl and stir well. Generously season both sides of the chicken, pressing the seasoning into the meat with your fingers.
Heat oil in a large skillet over medium heat. Sear the chicken breasts for 7 to 8 minutes on each side until cooked through. While the chicken cooks, slice the bell peppers and onion into thin strips.
Once the chicken is done, transfer it to a plate to rest. In the same skillet, add the bell peppers and onion, sautéing over medium heat for 4 to 5 minutes while stirring frequently.
As the vegetables finish cooking, slice the chicken into strips. For thinner pieces, cut the strips in half.
