Chicken Fajitas

Ingredients

Chicken Fajitas

  • 1 1/2 lb chicken breast

  • 1 onion, thinly sliced

  • 3 bell peppers, thinly sliced

  • 1 tbsp avocado oil

  • 1/2 lime, juiced

  • 4 gluten free tortillas

Fajita Seasoning

  • 1/2 tbsp chili powder

  • 1/2 tbsp cumin

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

 

Instructions

  1. Combine the fajita seasoning ingredients in a small mixing bowl and stir well. Generously season both sides of the chicken, pressing the seasoning into the meat with your fingers.

  2. Heat oil in a large skillet over medium heat. Sear the chicken breasts for 7 to 8 minutes on each side until cooked through. While the chicken cooks, slice the bell peppers and onion into thin strips.

  3. Once the chicken is done, transfer it to a plate to rest. In the same skillet, add the bell peppers and onion, sautéing over medium heat for 4 to 5 minutes while stirring frequently.

  4. As the vegetables finish cooking, slice the chicken into strips. For thinner pieces, cut the strips in half.
