Creamy Sausage and Tomato Pasta
Ingredients
1 tbsp avocado oil
1 lb ground pork
6 cloves garlic, minced
1 small onion, diced
1 tbsp tomato paste
28 oz can crushed tomatoes
2 tbsp fresh oregano, chopped
2 tbsp fresh basil, chopped
1/2 tsp salt
black pepper, to taste
1 cup unsweetened coconut milk
4 cups baby spinach
1/4 cup parmesan, grated
8 oz tagliatelle pasta (I use Jovial for gluten free)
Instructions
Cook the pasta according to the package instructions.
Heat avocado oil in a saucepan over medium heat. Add the garlic and onions, sautéing for 3 to 5 minutes until the onions soften. Add the ground pork, breaking it up as it cooks, and stir in the Italian seasoning.
Once the pork is browned, mix in the tomato paste, crushed tomatoes, oregano, and basil. Bring everything to a simmer, then pour in the coconut milk and add the baby spinach. Cook for about 3 minutes, until the spinach has wilted.
Stir in the cooked pasta until well combined. Serve with extra basil and parmesan for garnish.
