Salmon Patties with Lemon Dill Aioil

Ingredients

Salmon Patties

  • 3/4 lb salmon

  • 1/4 cup olive oil (divided into individual tablespoons)

  • 1 small onion, finely diced

  • 1 small red bell pepper, finely diced

  • 2 cloves garlic, minced

  • 2 large eggs

  • 3/4 tbsp dijon mustard

Lemon Dill Aioli

  • 1 tbsp dill

  • 1 tbsp parsley

  • 1/3 lemon, juiced

  • 1/3 cup nonfat plain greek yogurt

  • 1 tbsp avocado mayo

Instructions

  1. Preheat oven to 425°F. Bake salmon with olive oil, salt, and pepper for 10-13 minutes. Cool completely.

  2. Sauté onion and bell pepper in 1 tbsp olive oil until softened. Cool.

  3. Combine all patty ingredients in a bowl, form into 6 patties, and pan-fry in olive oil for 3-4 minutes per side.

  4. Mix aioli ingredients in a small bowl and serve with patties.
