Salmon Patties with Lemon Dill Aioil
Ingredients
Salmon Patties
3/4 lb salmon
1/4 cup olive oil (divided into individual tablespoons)
1 small onion, finely diced
1 small red bell pepper, finely diced
2 cloves garlic, minced
2 large eggs
3/4 tbsp dijon mustard
Lemon Dill Aioli
1 tbsp dill
1 tbsp parsley
1/3 lemon, juiced
1/3 cup nonfat plain greek yogurt
1 tbsp avocado mayo
Instructions
Preheat oven to 425°F. Bake salmon with olive oil, salt, and pepper for 10-13 minutes. Cool completely.
Sauté onion and bell pepper in 1 tbsp olive oil until softened. Cool.
Combine all patty ingredients in a bowl, form into 6 patties, and pan-fry in olive oil for 3-4 minutes per side.
Mix aioli ingredients in a small bowl and serve with patties.
