Za’atar Chicken Thighs

Ingredients

  • 6 bone in chicken thighs

  • 1 red onion, cut into wedges

  • 4 garlic cloves, minced

  • 2 tbsp extra virgin olive oil

  • 1 lemon, juiced

  • 1 lemon, sliced into rings

  • 1 1/2 tbsp Za'atar seasoning

  • 3/4 tbsp sumac

  • 1 1/2 tsp 7-Spice blend (Baharat)

  • Salt and fresh cracked pepper

 

Instructions

  1. In a large bowl, combine the chicken thighs, onion, garlic, olive oil, lemon juice, za’atar, sumac, 7-spice, salt, and pepper. Toss until the chicken is evenly coated, then cover and refrigerate for 1-2 hours to marinate.

  2. Preheat the oven to 375°F. Transfer the chicken, onions, and marinade to a baking sheet, braiser, or large oven-safe pan, spreading everything out evenly. Tuck lemon slices in among the chicken and onions.

  3. Bake for 25-30 minutes, or until the internal temperature of the chicken reaches 170°F and the skin is golden and crispy. If needed, broil for an additional 5 minutes to crisp up the skin.

  4. Garnish with chopped parsley
