Za’atar Chicken Thighs
Ingredients
6 bone in chicken thighs
1 red onion, cut into wedges
4 garlic cloves, minced
2 tbsp extra virgin olive oil
1 lemon, juiced
1 lemon, sliced into rings
1 1/2 tbsp Za'atar seasoning
3/4 tbsp sumac
1 1/2 tsp 7-Spice blend (Baharat)
Salt and fresh cracked pepper
Instructions
In a large bowl, combine the chicken thighs, onion, garlic, olive oil, lemon juice, za’atar, sumac, 7-spice, salt, and pepper. Toss until the chicken is evenly coated, then cover and refrigerate for 1-2 hours to marinate.
Preheat the oven to 375°F. Transfer the chicken, onions, and marinade to a baking sheet, braiser, or large oven-safe pan, spreading everything out evenly. Tuck lemon slices in among the chicken and onions.
Bake for 25-30 minutes, or until the internal temperature of the chicken reaches 170°F and the skin is golden and crispy. If needed, broil for an additional 5 minutes to crisp up the skin.
Garnish with chopped parsley
