BBQ Meatballs with Coleslaw
Ingredients
Meatballs
1 lb ground turkey, 93% lean
1/2 cup panko breadcrumbs
1 egg
2 tsp BBQ spice blend
1/4 white onion, grated
1/4 cup BBQ sauce
Coleslaw
4 cups coleslaw mix
1/2 cup nonfat plain Greek yogurt
1/4 cup avocado mayo
juice of 1 lemon
salt and pepper, to taste
Instructions
Preheat oven to 350º.
In a bowl combine ground turkey, panko breadcrumbs, egg, BBQ spice blend, and onion. Using hands, roll about 1 tbsp at a time into meatballs. These are relatively small and should make about 20 meatballs.
Place meatballs onto a parchment paper lined baking sheet. Bake for 20 minutes, until meatballs are golden brown and have reached an internal temperature of 165º.
While the meatballs are baking whisk together the Greek yogurt, avocado mayo, lemon, and salt and pepper in a large bowl. Fold in coleslaw mix.
When meatballs are done, toss with the BBQ sauce. Serve with coleslaw.
