Freezer Burritos

Ingredients

  • 1 lb chicken breast

  • 1 14 oz can black beans, drained and rinsed

  • 1 14 oz can diced tomatoes

  • 1 4 oz can diced green chilies

  • 1/2 cup cilantro, chopped

  • 1 cup cooked white rice

  • 1/2 cup salsa

  • 2/3 cup cheddar, shredded

  • 6 burrito tortillas

Instructions

  1. Season the chicken with taco seasoning (or chili powder, cumin, garlic powder, salt, and pepper). Heat avocado oil in a large pan over medium heat, sear the chicken for 5 minutes per side, then add water, cover, and simmer for 15 minutes or until fully cooked.

  2. Remove the chicken, shred it, and return it to the pan. Stir in the beans, tomatoes, and diced chilies, then drain the mixture in a colander over the sink.

  3. Mix in the cooked rice and chopped cilantro for added flavor.

  4. Heat tortillas in a large pan to make them pliable.

  5. Lay a tortilla flat, add the chicken mixture to the center, and top with 2 tablespoons of cheese and a dollop of salsa. Fold the bottom up, tuck in the sides, and roll tightly into a burrito.

  6. These burritos can be wrapped in foil and frozen for up to three months.

  7. To reheat:

    • From frozen: place in the oven at 350º for 40 minutes.

    • From thawed: place in the oven at 350º for 20 minutes.
