Cajun Shrimp & Sausage Bowls

Ingredients

Bowls

  • 2 links andouille chicken sausage, sliced

  • 4 oz raw shrimp

  • 1 small zucchini, sliced into half moons

  • 1 red bell pepper, sliced

  • 1/2 red onion, sliced

  • 1 tsp Cajun seasoning

  • 1 cup cooked rice

Zesty Lime Dressing

  • 4 oz nonfat plain Greek yogurt

  • 1 clove garlic, grated

  • zest + juice of 1 lime

  • salt and pepper, to taste

 

Instructions

  1. Heat pan over medium heat. Add sausage, cooking until browned on each side. Remove with a slotted spoon. To the same pan, add the shrimp. Cook until pink and firm. Remove with a slotted spoon.

  2. Add the veggies to the pan and saute until softened. Return sausage and shrimp to the pan, add Cajun seasoning, and toss to coat.

  3. Whisk together the yogurt, garlic, lime juice and zest, and salt and pepper.

  4. Serve each bowl with 1/2 cup cooked rice and the dressing on the side.
