Coconut Lime Chicken
Ingredients
Chicken + Veggies
1 lb chicken breast, butterflied
2 tbsp arrowroot starch
1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp turmeric powder
1/4 tsp black pepper
1 red bell pepper
Sauce
1 14 oz can coconut milk
2 tsp arrowroot powder
1/4 cup sweet chili sauce
2 tbsp lime juice
1 tbsp tamari
1 tbsp chili garlic paste
Instructions
Whisk together the coconut sauce ingredients and set aside. Cover with plastic wrap and pound to an even thickness. Pat dry.
Whisk together arrowroot, salt, garlic powder, turmeric, and black pepper in a shallow dish. Dredge each chicken fillet in the mixture, shaking off excess.
Heat butter in a large skillet over medium heat. Once hot, add chicken and cook for 4-5 minutes per side until golden and cooked through. Transfer chicken to plate.
Reduce heat to medium and add the bell pepper, sauteing for 1-2 minutes, before mixing in the sauce. Simmer for 1-2 minutes until chickened.
Return the chicken to the skillet and warm through. Serve with garnishes of choice such as cilantro, sliced green onions, or sliced jalapenos.
