BBQ Turkey Meatloaf
Ingredients

1.5 lbs ground turkey (93/7 blend)
1 small yellow onion
2 cloves garlic, minced
1 large carrot, grated
1 tsp salt
1 tsp pepper
1 tsp dried oregano
1 tsp onion powder
1 egg
2 tbsp bbq sauce
2 tbsp sugar free ketchup
1/2 cup panko breadcrumbs
1/4 cup chopped parsley
Topping
2 tbsp bbq sauce
2 tbsp sugar free ketchup
Instructions
Preheat oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, add the ground turkey. Using a grater, grate the yellow onion into the turkey, or finely chop it and add it in.
Add minced garlic, salt, pepper, oregano, and onion powder. Mix until combined.
Add the egg, BBQ sauce, ketchup, breadcrumbs, and parsley, mixing thoroughly.
Transfer the mixture into a parchment paper lined loaf pan and pat down to fit the pan.
In a small bowl, mix the BBQ sauce and ketchup, then brush over the top of the loaf.
Bake for 45-50 minutes, until the internal temperature reaches 170°F.
Let cool for 10 minutes before slicing and serving.

MEAL PREP NOTE: If prepping ahead, wait to add the glaze until after baking. Let the meatloaf cool slightly, then glaze and store in an airtight container in the fridge or freezer.
