Mediterranean Beef Stir Fry

Ingredients

  • 1 tbsp olive oil

  • 1 red bell pepper, deseeded and diced

  • 1 pint cherry tomatoes, sliced in half

  • 8 oz baby spinach

  • 4 garlic cloves, minced

  • 2 green onions, thinly sliced, white and green parts separated

  • 1 lb ground beef

  • ½ tsp dried oregano

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tbsp crumbled feta (optional)

Instructions

  1. Heat oil in a large pan over medium-high heat. Sauté bell pepper and cherry tomatoes for 4-5 minutes until blistered.

  2. Add garlic and stir for another minute. Stir in spinach and white parts of green onions, cooking until wilted. Remove vegetables from the pan.

  3. Add ground beef, oregano, salt, and black pepper. Cook until browned, then drain excess grease.

  4. Return veggies to the pan, add green onion tops, and warm through. Garnish with feta before serving.
