Carne Asada Breakfast Burritos
Ingredients
5 eggs
9 tbsp egg whites
2 scoops unflavored collagen
10 oz strip steak, finely sliced
4 oz manchego, shredded
1 cup sliced red bell pepper
¼ medium onion, sliced
5 burrito size tortillas
Instructions
Preheat the oven to 350ºF.
Whisk together eggs, egg whites, and collagen powder with seasoning. Pour onto a parchment-lined baking sheet and spread into a thin layer. Bake for 20 minutes until set. Sprinkle shredded manchego on top and bake 5 more minutes until melted.
While eggs bake, sear steak over high heat for 3-4 minutes per side (medium rare). Let rest, then slice thinly.
Sauté onions and bell peppers until softened.
Slice the eggs into 5 portions.
Warm the tortillas slightly to make them pliable, then layer the eggs, steak, and veggies evenly into each one. I work one at a time while doing this.
Roll into burritos by folding in the sides and rolling tightly from the bottom up. Serve immediately or wrap individually in foil for meal prep.
To reheat:
From frozen: place in the oven at 350º for 40 minutes.
From thawed: place in the oven at 350º for 20 minutes.
