Citrus Herb Chicken & Rice Bake

Ingredients

Citrus Herb Sauce

  • Juice of 1 small orange (~2 tbsp)

  • ¼ red bell pepper

  • 1 tomato, roughly chopped

  • 1/3 small onion, roughly chopped

  • 1/3 cup cilantro leaves

  • 1/3 cup parsley leaves

  • 1 clove garlic

  • 2 tbsp chicken broth

  • 1/2 tsp sea salt

  • 1/3 tsp aleppo pepper flakes

Chicken & Rice Bake

  • 1/2 lb chicken thighs, diced

  • 1/3 cup uncooked rice

  • ¾ red bell pepper, sliced

Instructions

  1. Preheat oven to 425º.

  2. Blend sauce ingredients until smooth.

  3. Add diced chicken, rice, and bell pepper to an oven-safe dish. Pour sauce over, ensuring rice is submerged.

  4. Bake for 35 minutes until rice has absorbed the liquid and chicken is cooked through.

    *NOTE: I made this in individual glass tupperware containers so once it cooled I could store it pre-portioned.
