Citrus Herb Chicken & Rice Bake
Ingredients
Citrus Herb Sauce
Juice of 1 small orange (~2 tbsp)
¼ red bell pepper
1 tomato, roughly chopped
1/3 small onion, roughly chopped
1/3 cup cilantro leaves
1/3 cup parsley leaves
1 clove garlic
2 tbsp chicken broth
1/2 tsp sea salt
1/3 tsp aleppo pepper flakes
Chicken & Rice Bake
1/2 lb chicken thighs, diced
1/3 cup uncooked rice
¾ red bell pepper, sliced
Instructions
Preheat oven to 425º.
Blend sauce ingredients until smooth.
Add diced chicken, rice, and bell pepper to an oven-safe dish. Pour sauce over, ensuring rice is submerged.
Bake for 35 minutes until rice has absorbed the liquid and chicken is cooked through.
*NOTE: I made this in individual glass tupperware containers so once it cooled I could store it pre-portioned.
