Honey Glazed Meatballs with Rice and Carrots

Ingredients

Sauce

  • 1 tbsp tamari

  • 1/4 cup sriracha

  • 2 1/2 tbsp rice vinegar

  • 2 1/2 tbsp honey

  • 1/2 tsp sesame oil

  • 3 cloves garlic, minced

  • 1 tbsp ginger, grated

Meatballs + Sides

  • 1 1/2 lb ground beef

  • 1 cup almond flour

  • 1 small onion, finely diced

  • 1 egg

  • 2 cups carrots

  • 1 tsp avocado oil

  • 1/4 tsp garlic powder

  • 1/4 tsp ginger powder

  • 1 1/2 cup dry white rice

 

Instructions

  1. Preheat oven to 375°F. Cook rice according to package instructions and set aside.

  2. Mix the meatball ingredients in a bowl. Form into 1 1/2-inch balls and place on a lined baking sheet. Toss carrots with garlic powder, ginger powder, and avocado oil, and add to the baking sheet.

  3. Bake for 20-25 minutes until meatballs are cooked through and carrots are tender.

  4. While baking, combine sauce ingredients in a saucepan. Simmer over medium heat until thickened, 8-10 minutes.

  5. Toss meatballs in the sauce.

  6. Distribute meatballs and carrots into containers with the cooked rice.
