Honey Glazed Meatballs with Rice and Carrots
Ingredients
Sauce
1 tbsp tamari
1/4 cup sriracha
2 1/2 tbsp rice vinegar
2 1/2 tbsp honey
1/2 tsp sesame oil
3 cloves garlic, minced
1 tbsp ginger, grated
Meatballs + Sides
1 1/2 lb ground beef
1 cup almond flour
1 small onion, finely diced
1 egg
2 cups carrots
1 tsp avocado oil
1/4 tsp garlic powder
1/4 tsp ginger powder
1 1/2 cup dry white rice
Instructions
Preheat oven to 375°F. Cook rice according to package instructions and set aside.
Mix the meatball ingredients in a bowl. Form into 1 1/2-inch balls and place on a lined baking sheet. Toss carrots with garlic powder, ginger powder, and avocado oil, and add to the baking sheet.
Bake for 20-25 minutes until meatballs are cooked through and carrots are tender.
While baking, combine sauce ingredients in a saucepan. Simmer over medium heat until thickened, 8-10 minutes.
Toss meatballs in the sauce.
Distribute meatballs and carrots into containers with the cooked rice.
