Sausage and Sauerkraut Bowls

Ingredients

  • 8 oz chicken sausage links, sliced

  • 1 cups sauerkraut, drained

  • 1/4 cup hummus

  • Juice of ½ a lemon

  • ½ tbsp extra virgin olive oil

  • 1/4 cup quinoa

Instructions

  1. Cook quinoa according to package instructions. I combine quinoa with 1 cup water in a saucepan, bring it to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the liquid is absorbed. Turn off the heat, keep the lid on, and let it sit for 5 minutes before fluffing with a fork.

  2. Heat a pan over medium heat and cook the sausage until browned, about 5-10 minutes.

  3. Whisk together hummus, olive oil, and lemon juice until smooth.

  4. Assemble bowls by layering quinoa, sauerkraut, and sausage. Drizzle with the dressing or store it separately to maintain freshness.
