Sesame Ginger Chicken Cabbage Bowls

Ingredients

Sesame Ginger Dressing

  • 1/4 cup sesame oil

  • 1 tbsp extra virgin olive oil

  • 2 tbsp maple syrup

  • 2 tbsp rice vinegar

  • juice of 1 lime

  • 1 large clove garlic, grated

  • 1 tbsp ginger, grated

  • 1 tbsp tamari

Bowls

  • 4 cups cabbage, shredded

  • 2 cups cucumber, diced

  • 2 cups shelled edamame

  • 1 cup carrots, grated

  • 1 bunch green onion, sliced

  • 1 lb chicken breast

Instructions

  1. Cook the chicken using your preferred method. If searing, season with salt and pepper, sear both sides, then add ¼ cup water, cover, and simmer for 25 minutes. Let cool, then shred.

  2. While the chicken cooks, whisk together the sesame oil, olive oil, maple syrup, rice vinegar, lime juice, minced garlic, grated ginger, red pepper flakes, and a pinch of salt in a small bowl.

  3. Divide the shredded cabbage, grated carrots, edamame, and diced cucumber evenly among four meal prep bowls.

  4. Top each bowl with the cooked chicken and drizzle with the sesame ginger dressing.

  5. Garnish with sliced green onions and serve immediately, or store in airtight containers for with the dressing in ramekins for meal prep.
